Why are November, February and March the sweet spot?

They combine comfortable temperatures, in the low to mid 20s, with fewer visitors than the Christmas and New Year weeks. You can spend a full morning on the plateau without the heat cutting it short.

In these months you can walk around the base of the Great Pyramid at midday, add the Grand Egyptian Museum in the afternoon and still enjoy the evening.
